ELENE'S BEAN DIP






Since today is Super Bowl Sunday  and this is my very first ever blog post, I am going to start with a delicious Mexican bean dip that has been a favorite of  ours since the early 90's.     So hearty it can be a  meal.  Typically served with chips but  also great served with tortillas and rice.

ELENE'S BAKED MEXICAN BEAN DIP
9 x 13 pan
The following ingredients are put in the pan in the order that follows:
2 cans refried beans
1 pound ground beef or turkey cooked with onions and seasoned with taco seasoning
1 - 7 oz can green chilies
A  thin layer of  your favorite salsa (not fresh salsa or the dip will be runny)
Layer of sour cream ( not low fat or the dip will be runny)
Sprinkle generously with shredded cheese
Garnish with sliced olives and chopped green onions
Bake at 350 for 30 -40 minutes or until the cheese is bubbly and lightly browned
Sprinkle with fresh cilantro after baking
Serve with a big bag of tortilla chips.

*TIP:  No need to shred your own cheese. The shredded Mexican blend cheese from Costco is less expensive then the block cheese.And there taco seasoning is a good value as well.
